Foodshed Sustainability (3 CR)
Fridays, 1-3:50pm, May 31-August 9 in Carbondale
Prerequisites: Special application, completion of 45 credit hours of college coursework (transcript required) and college-level reading.
Are we what we eat?  This course asks the question of who we are in relation to our food, the earth that provides it, and the ways in which we harvest nature’s intelligence to produce it.  Taught by local food leader Dr. Illène Pevec, this course teaches students to examine food production and consumption by analyzing the resource cycles (or “foodsheds”) that lead from soil to plate to body and back again to soil. Cost: 3 credits of Bachelor's-level tuition.

Sustainable Agriculture (4 CR)
Fridays, 9am-12:10pm, May 31-August 9 in Carbondale (plus select Saturdays, 9-10am)
Prerequisites: Special application, completion of 45 credit hours of college coursework (transcript required) and college-level reading.
Co-requisites: SUS-300, SUS-301 or permission of the instructional chair.
This class, taught by Amy Hutton, M.Ag., Certified Permaculture Designer, will teach this vital skill by making use of our valley’s unique resources, including the Grow Dome at Roaring Fork High School, Rock Bottom Ranch, CRMPI, Crystal River Meats, and the accumulated wisdom of our valley’s heritage ranching families. Topics include rotational livestock grazing, the integration of domesticated animals and plant crop production, traditional farming knowledge, permaculture, forest gardening and farming with the wild, water harvesting and irrigation methods, seed-saving and natural pest management. Lab hours take place each Saturday (except July 6) and will include student research plots and lots of other rich field experiences, from cattle handling to composting. Cost: 4 credits of Bachelor's-level tuition.
