School Degree Requirements
In this program you will study the theory, science, and classical
foundations of modern cuisine as well as a broad range
of business courses designed to prepare individuals
for the challenges in today's food service industry.
The Colorado Mountain College Culinary Program gives
you 6000-hours of real-life experience, applying what
you learn in the classroom.
The American Culinary Federation Apprenticeship Program at Keystone
and Vail has helped set the standard for culinary apprenticeship in the
United States. The goal of the ACF Apprenticeship is to teach classical
skills in a "hands on" college environment.
Your academic classes will hone in on cost control,
nutrition and computer applications in addition to the classical foundations
of various types of cuisine. On the job you will work full-time in the
apprenticeship property's kitchens. You will be classified as a full-time
employee of the property and paid a competitive wage and benefits package.
All students will be registered with the American
Culinary Federation as Apprentice Cooks. Students also receive a Certificate of Garde Manger upon completion of their first year and an Apprentice Cook Certificate upon completion of their second year.
This is a demanding culinary school program, running nine consecutive
semesters for three years. Students typically work
five days a week and attend class one day a week.
Successful graduates from this program receive
an Associate of Applied Science Degree in Culinary Arts from Colorado
Mountain College, and Certified Cook credentials from the American Culinary
Federation. The Certified Cook credential is the first level of certification
in the progression toward the credential of Certified Executive Chef. |
