In the great words of Aristotle, “We are what we repeatedly do. Excellence, therefore, is not an act but a habit.” This is especially true at Colorado Mountain College Culinary Institute. Like most schools, we give you great information and learning tools. But where we take a step beyond is in allowing you to practice these skills until they become habit. Our model of apprenticeship, based on standards set forth by the American Culinary Federation, can fast track you to a culinary career. When you graduate you will have mastered 360 specific cooking skills, completed 560 hours of academic studies, earned an Associate of Applied Science Degree in Culinary Arts, worked a minimum of 4000 hours in professional kitchens and have earned the ACF credentials of Certified Sous Chef. That’s a lot more than just talk.


Real world experience is your school
Students at both the Keystone/Breckenridge apprenticeship experiences. Approximately every six months you rotate into a new educational work environment. Experience with different menus, kitchens, and chef personalities opens many doors when applying for jobs after you graduate.
